family of 5 around the dinner table.
this only happens around 10 times a year: holidays plus our birthdays.
we've developed a tradition of eating in. i cook dinner and we eat until our button pops.
i can honestly say that i'm very thankful for this family of mine and i cant wait to see what the future holds for us.
now, when it comes to these 10 or so dinners, i try to go over the top. the whole 5 course meal or what not. but this time, i decided to keep it short and simple...well somewhat. i wanted to try something new and go a little outside the box.
so heres what we had:
- asparagus salad - shave a bundle of asparagus (~12), toss with a vinaigrette (juice of 1/2 a lemon, 1/4 cup olive oil, 1/4 cup parmesan cheese, salt, pepper), shave extra parmesan cheese on top.
- spinach salad with a red wine vinaigrette (equal parts red wine vinegar and olive oil, salt, pepper, sugar to taste) - tossed with cherry tomatoes, red onion with shaved parmesan cheese.
- beef wellington
-shrimp skewers
-roasted potatoes
dessert - fruity cups
ingredients:-phyllo dough, butter, sugar, vanilla pudding powder, heavy cream, fruits.
-mix vanilla pudding powder with 1 1/2 cups cream. place in fridge.
-make phyllo cups as instructed on box. bake for 9-10 mins.
-fill cups with pudding and seasonal fruits.
