mini apple pies

i was craving an apple pie one day.
i just wanted one bit so i decided to try and bake some...mini style.
i couldnt decide on what to do for the top...
so i tried out a couple different designs:

ingredients:
  • ready made pie dough found in refrigerated isle
  • 1/4 cup unsalted butter
  • 1 tablespoon and 1-1/2 teaspoons all-purpose flour
  • 2 tablespoons water
  • 1/4 cup white sugar
  • 1/4 cup packed brown sugar
  • pinch of salt
  • 1 tsp vanilla extract
  • 1-2 tsp cinnamon powder
  • 3 Granny Smith apples - peeled, cored and cut into small bite sizes

directions:
preheat oven to 425 F
cut apples, mix with cinnamon and set a side.
in a small pot, mix butter and flour together.
add water, both sugars and salt..bring to boil
add apples into pot, bring heat to medlow and cover lid.

roll out pie dough
using a circle cookie cutter, cut out 24 circles
place into mini cupcake pan
(i like to line the pan with mini cupcake cups for easy removal later)
add apple mixture into each cup
place top layer of dough.
glaze with sauce left over in the pot

bake for 20-25 mins
(this part i will change later....i started baking it off at the wrong temp so it took me a little longer)

i'll leave you with one close up
enjoy ^^

Noah's First Birthday

I planned for this event many months ago and I was super excited when it was finally time.
This was my very first BIG ORDER and I'm happy to say that *it was a success*!!
With the help of 2 friends (and even my father and mother) everything came out beautifully.
location of event was at Blue Water Grill
a beautiful place that matched perfectly with the nautical theme.
now for some pictures:

the decoration i cant take any credit for.
it was done by Noah's mother and event planner Christine
they're both super talented wouldnt you say?

heres a close up of the cake and cupcakes

happy birthday little Noah
